
The GlenAllachie has released a 35-year-old cask strength Speyside single malt, distilled in 1990 and created by Master Blender Billy Walker. The whisky brings together four cask types —Mizunara virgin oak, American virgin oak, Oloroso sherry and Pedro Ximénez sherry— and is available now for £1,512.99.
Walker, who has more than 50 years of experience in the Scotch whisky industry, selected Mizunara virgin oak as the central influence in the expression. The rare Japanese oak, sourced from 200-year-old trees, is known for being difficult to work with due to its porous nature and tendency to leak.

“This 35-year-old embodies everything I have learnt over the last five decades — masterful cask selection and management, patience, and sensory instinct,” said Billy Walker, Master Blender and owner of The GlenAllachie. “By uniting these four extraordinary cask types, particularly the Mizunara which requires a superlative level of skill to work with, we’re extremely proud to have created a whisky that is as complex as it is harmonious.”
He added: “It is truly a marvel of time and a project that has challenged us in the very best way.”
The whisky is bottled at 50.2% ABV, non-chill filtered and with no added colouring. Official tasting notes from the brand describe mocha, crystallised cinnamon and treacle tart on the nose, evolving into cocoa, toasted hazelnuts, pineapple, ginger and heather honey. The palate offers cocoa, baking spices and chocolate-coated raisins, complemented by coconut, brandied orchard fruits, sandalwood, vanilla, dried red fruits and honeycomb.
Scottish designer Kayley Barbour created the packaging in-house. The bottle sits in a Valchromat box housed within a bespoke wooden case inspired by Kumiko, the traditional Japanese woodworking art of assembling patterns without nails. Each side features four motifs representing the quartet of cask types used.
The GlenAllachie is one of Scotland’s few independently owned distilleries. Under Walker’s leadership, the distillery’s 12-year-old expression was named World’s Best Single Malt at the 2025 World Whiskies Awards.
